And, We're Back!

Well, life has definitely been topsy-turvy to say the least. Things have settled down for the meantime, and I am (sort of) back to cooking and baking. Posts will no longer necessarily be every week due to the Elephant's and my current living situation, as well as all of our kitchen currently sitting in storage, but I will be posting recipes once again! Huzzah!

On a bright note, I have lost four pounds this past month, which is extremely exciting and motivating. Even more so with a wedding I need to buy a dress for come October. Better get to some exercising!

Life Changes

This is just a quick little heads up to let any followers out there know there will be very little updates the next few weeks (no different than normal, right?). The Elephant and I are in the process of moving, as well as continuing with school and work, so things are going to be quite hectic. Do expect a recipe sometime later today or tomorrow, though!

Blue Cheese Turkey Burger

I apologize for my lack of updates recently [again]. Real life has been catching up with me, and I've a lot to get done every week for both school and work. Though, one of my goals is to blog some more on AWD.

I haven't been able to go to weigh-ins as of late, but I have been weighing in at home, and am slowly going downward. I would like it to go faster, but I'm not going to knock it, because it's at least in the right direction!

I also recently made myself an anchor sheet to give myself some motivation and more organization over my habits every day. Even though I've only been using it a few days, I really feel it's helped a lot, especially since it's sitting right above my desk where I spend quite a bit of time with work and school. Every time I look up--it's there. And I even put motivational quotes on it, which will help, too, hehe.

Anyway, here's a favorite recipe of the Elephant and myself adapted from the new Just 5 Points+ cookbook. Try serving it to non-WW, and they'll never know. ;)

Beef and Barley Stew, and Weight Update

I did not go to my meeting yesterday. I am still shaking off whatever cold I picked up last weekend, and slept in. I did, however, weigh in at home on our scale (that I don't like to touch unless I don't make a meeting) and lost one pound, for a total of about 27 pounds over my starting weight.

While I know it's going to take a while to get back down to my starting weight and then a manageable weight, I still felt kind of down that the scale was that high... which is just feeding my motivation (no pun intended!).

I did not track every day this past week, due to lack of motivation. I only tracked about three days, and I feel like it's an outlier that I lost weight... though I'm not going to naysay the loss! I just feel that it wasn't as deserved based upon my behaviors. I also did not drink many liquids this past week. I need to start keeping a waterbottle on my desk and with me at all times.

Anyway, this week, I cooked up some Beef and Barley stew, which was absolutely delicious. The Elephant loved it as well, though he didn't find it quite as filling as I did.

Chili-Glazed Chicken and Quinoa

I was at a loss of what recipe to post this week, and then remembered I had promised a close friend of mine that I'd share one of my favorite quinoa recipes with her, since she's gotten into a quinoa kick. So I dug out my Healthy Cooking Basics book and made up some chicken and quinoa. Since she's a vegetarian, I suggested trying it with Tofu, and I hope she lets me know how it is with Tofu! I'd totally be willing to try it... though I'm not so sure about the Elephant!

A Weight Epiphany

I weighed in at the heaviest I've ever been in my life this weekend--273 pounds. And I came to a few realizations throughout the rest of my weigh-in day amidst some emotional rollercoaster moments.

1) I've not been tracking, and haven't really been following the plan at all, let alone updating the blog on my progress or recipes.
2) If I want to maintain a healthy lifestyle, no matter what weight I'm at, I need to work towards it.
3) I need to move more.
4) I have not been drinking enough liquids (of any type).
5) I have been put on some new medications that I really would like to get off of.

So, all of these realizations made me reevaluate how I was going to use this blog. While I still plan on updating weekly with a recipe, I also plan to start using this as a way to track monthly goals, and give an update on my weight.

In short, this blog will no longer focus on just the recipes I make, but on my entire lifestyle changes with Weight Watchers.

I have no excuse for not making myself and my health a priority, especially during the major life changes (both good and not so good) that have happened the past few months. while I may not be able to control any of those events, I can control my eating and healthy behaviors.

So, for myself, I am getting back on the bandwagon. As of today, I have dragged out the Wii Fit and plan on hopping on it as soon as this is posted.

Since I've fallen off the bandwagon, my goal for the rest of February will be short but necessary:

1) Track every day. Regardless of whether I go over my daily and weekly (and exercise) points, I am going to track. And I am not going to beat myself up if I do go over my points.
2) Drink more liquids. I need to drink more liquids in general. At this point, I am just going to push myself to check off all of my liquid boxes, whether it be through soda, seltzer, or juice. Next month, I can focus on honing this goal, but for now, I just need to drink more than one soda and a glass of milk each day.

Pork Fried Brown Rice

Life has been busy, and vacation ended up with some interesting issues with getting online. But, I'm back to my own internet with a new computer, and a new recipe for you!

This one I cooked up on my own (no pun intended...). I just kind of threw stuff in a pan and it came out really well, if I do say so myself. A great one-dish dinner, and the Elephant enjoyed it as well, and has asked me to make it again.

Pork Fried Brown Rice
4 servings at 7P+ each

12 ounces lean pork
2 teaspoons fresh ginger root, minced
2 cloves garlic, minced
2 cups brown rice, cooked and cooled
1 small vidalia onion, chopped
1 egg
2 tablespoons fish sauce
2 teaspoons sesame oil
1/2 cup frozen green peas

1. Marinate the pork in 1 tablespoon of the fish sauce, 1 teaspoon of the sesame oil, the ginger, and the garlic for at least 30 minutes.
2. Spray a non-stick pan with cooking spray, and add the pork and marinade. Cook until the pork starts to brown, about 3 minutes.
3. Add the onion to the skillet. Cook until softened, about 3 minutes.
4. Add the egg, stirring constantly until it begins to set, about 2 minutes.
5. Stir the rice, soy sauce, and remaining fish sauce and sesame oil into the skillet. Cook until the rice is heated through, about 5 minutes.
6. Stir in the peas and cook until heated through.
